  • 150g confectioners' sugar
  • 200g unsalted butter, softened
  • 1 egg
  • 3 eggs
  • 100g unsalted butter, softened
  • 10ml vanilla extract
  • 20g almond flour
  • 200g ground almonds
  • 5ml almond extract
  • 240g confectioners' sugar
  • 45ml heavy cream

    In a food processor, mix together the flour and confectioners' sugar. Add the softened butter and pulse until well combined.

    Add the egg and pulse until the dough forms.

    Roll out the dough on a floured surface. Use a large cup to cut out circles. Gently press the circles into greased muffin tins.

    Place the muffin tin in the refrigerator while preparing the filling.

    Beat the eggs with the confectioners' sugar. Add the softened butter, vanilla extract, almond flour, and almond extract.
