Figgy Duff Pudding
A classic Maritime Canadian dessert that's sweet, spiced, and utterly delightful. This traditional pudding is a treasure trove of complex flavors and warm spices.

- 1 1/4 cups all-purpose flour
- 1/2 cup dark brown sugar
- 2 teaspoons active dry yeast
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup raisins
- 6 tablespoons unsalted butter, melted
- 1/2 cup molasses
- 3 tablespoons water

In a medium bowl, combine the flour, sugar, yeast, and spices.

Add the raisins and mix well, making sure they're fully coated in the dry ingredients.

Add the melted butter, molasses, and water. Mix with a wooden spoon until a smooth batter forms. Transfer the batter to a cotton pudding cloth or a reusable steamer bag.

Tie the top of the bag with kitchen twine, leaving about 2-3 inches for expansion. Place the pudding in a large pot or Dutch oven and add enough boiling water to come halfway up the side of the bag.

Simmer the pudding for 1 hour 30 minutes, or until it's firm and cooked through. Remove from the water and let cool slightly before serving
💡 Chef's Tip
Use dark molasses for the best flavor. If you don't have a pudding cloth, a reusable steamer bag works beautifully. Serve warm with maple syrup or whipped cream.
