  • 1 lb potatoes
  • 2 tbsp olive oil
  • 4 eggs
  • 1 tbsp red wine vinegar
  • 2 tbsp capers
  • 1.75 oz sunflower oil
  • 1/2 red onion
  • 3.5 oz spinach
  • 14 oz fresh or canned tuna

    Preheat the oven to 400°F (350°F convection). Toss the potatoes with 2 tsp of oil and season. Roast for 20 minutes, stirring halfway through, until crispy and golden.

    Meanwhile, place the eggs in a pot of boiling water and simmer for 8-10 minutes. Transfer to cold water, peel, and cut in half.

    In a large salad bowl, whisk together the remaining oil, red wine vinegar, and capers. Add the red onion and spinach. Gently fold in the tuna and roasted potatoes. Season to taste.

    Garnish the salad with the halved eggs and serve immediately.

You can use grilled fresh tuna for extra flavor. Prepare the ingredients in advance and assemble just before serving to maintain freshness. A dry white wine pairs perfectly with this salad.
