  • 4 brioche burger buns
  • 4 slices aged cheddar cheese
  • 4 iceberg lettuce leaves
  • 2 firm tomatoes, sliced into rounds
  • 8 dill pickles, sliced
  • 1 red onion, thinly sliced into rings
  • Salt and freshly ground black pepper
  • 1 tbsp neutral oil (sunflower or grapeseed)
  • For the secret sauce:
  • 4 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • 1 pinch sugar
  • Salt and pepper to taste

    Prepare the secret sauce: in a bowl, combine the mayonnaise, ketchup, Dijon mustard, smoked paprika, Worcestershire sauce, and a pinch of sugar. Mix well, taste, and adjust seasoning. Refrigerate for at least 10 minutes to allow the flavors to develop.

    Divide the ground beef into 4 equal portions (about 3.5 oz each). Form into balls without overworking the meat to keep it tender, then flatten into 1/2-inch thick patties slightly wider than the buns (they will shrink during cooking).

    Heat a cast-iron skillet or griddle over high heat with a drizzle of oil until very hot (almost smoking). Sear the patties for 3 minutes without touching them to develop a nice golden crust.
