Cannelloni - Two Ways
Two delicious versions of cannelloni: one filled with melting cheese and spinach for vegetarians, the other stuffed with ground meat and vegetables for those who love hearty dishes.

- 1.1 lbs cannelloni pasta
- 10.5 oz fresh spinach
- 9 oz ricotta cheese
- 3.5 oz cream cheese
- 5.5 oz grated Parmesan cheese
- 14 oz ground meat
- 2 carrots
- 2 zucchini
- 2 onions
- 4 cloves garlic
- 2 cups tomato sauce
- Olive oil
- Nutmeg
- Salt and pepper

Cook the cannelloni pasta according to the package instructions. Drain and set aside.

CHEESE-SPINACH VERSION: Sauté the spinach, then mix with the ricotta, cream cheese, 1.75 oz of Parmesan, nutmeg, salt, and pepper.

MEAT-VEGETABLE VERSION: Finely mince the carrots, zucchini, and onions. Brown the ground meat, then add the garlic and chopped vegetables. Cook for 10 minutes.

Fill the cannelloni with your chosen stuffing.

Coat the bottom of a baking dish with a little tomato sauce.

Arrange the cannelloni in the dish and pour the remaining tomato sauce over the top.

Sprinkle with the remaining 3.5 oz of grated Parmesan.

Bake at 350°F for 25-30 minutes until golden and bubbly.
