🛒 Ingredients

10 servings

10
  • 1 cup whole milk
  • 1½ cups all-purpose flour
  • 1 large egg
  • ½ tsp baking powder
  • 2 tbsp unsalted butter, plus extra for greasing
  • 2 tbsp grated Parmesan cheese
  • 3½ oz (100 g) sliced cooked ham
  • 5 oz (150 g) shredded mozzarella or cheddar
  • 2 ripe tomatoes, diced
  • 1 small onion, finely chopped
  • Salt, black pepper, and dried oregano to taste

Directions

  1. 1

Add milk, flour, egg, baking powder, butter, and Parmesan to a blender. Blend for about 1 minute until the batter is completely smooth and lump-free.

  2. 2

Cover the batter and let it rest for 30 minutes in the refrigerator.

  3. 3

While the batter rests, make the tomato sauce: sauté the onion in a knob of butter over medium heat until softened, add diced tomatoes, season with salt, pepper, and oregano, and simmer for 10 minutes.

  4. 4

Preheat the oven to 350 °F (180 °C). Grease a baking dish or rimmed sheet pan with butter and dust lightly with flour.

  5. 5

Pour the rested batter into the prepared pan. Layer on the ham slices and scatter the shredded cheese on top.

  6. 6

Spoon the tomato sauce evenly over everything and bake for 30–35 minutes until golden and set with crispy edges.

  7. 7

Let it cool for 5 minutes before slicing and serving.

💡 Chef's Tip

Swap ham for sautéed mushrooms or roasted peppers for an easy vegetarian version. Leftovers reheat beautifully in a skillet over low heat.
