- 7 oz ramen noodles
- 4 1/4 cups chicken or dashi broth
- 4 eggs
- 7 oz pork or chicken
- 3.5 oz shiitake mushrooms
- 3.5 oz bean sprouts
- 2 shallots
- 2 cloves garlic
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp white miso
- 1 sheet nori
- 1 tsp sesame seeds
- 1 tbsp sesame oil

Bring the broth to a boil with the garlic and shallots. Add the soy sauce and mirin.

Dissolve the white miso in a little bit of hot broth, then stir it into the rest of the broth.

Poach the eggs for 6-7 minutes for a runny yolk, then peel them carefully.

Sear the meat in a pan with a little sesame oil until fully cooked.

Cook the mushrooms and bean sprouts separately in the broth for 3-4 minutes.

Cook the ramen noodles according to the package instructions, drain, and rinse.

Divide the noodles into 4 bowls, pour over the hot broth, and arrange the meat, eggs, and toppings on top.

Add the cut nori sheets and sprinkle with sesame seeds. Serve immediately.
