  • 1.5 kg of free-range chicken
  • 3 finely chopped red peppers
  • 2 crushed garlic cloves
  • 1 teaspoon of grated fresh ginger
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of olive oil
  • 1 finely chopped red onion
  • 2 grated carrots
  • 1 grated beetroot
  • 4 chopped white cabbage leaves
  • 2 tablespoons of mayonnaise
  • 2 tablespoons of Greek yogurt
  • 1 teaspoon of cumin seeds
  • Salt and pepper to taste

Directions

    Prepare the marinade by blending the peppers, garlic, ginger, oregano, coriander, paprika, vinegar, and oil until smooth.

    Generously rub the marinade all over the chicken, inside and out, then let it rest for 1 hour at room temperature.

    Preheat the oven to 190°C (thermostat 6).

    Place the chicken in a baking dish and bake for about 1 hour 20 minutes.

    Remove the chicken from the oven and let it rest under aluminum foil for 20 minutes.

    Meanwhile, prepare the cabbage salad by mixing the onion, carrots, beetroot, and cabbage.

    Prepare the sauce by blending mayonnaise, yogurt, and cumin seeds; pour over the salad and mix well.

    Cut the chicken and serve hot with the cabbage salad and homemade fries.

💡 Chef's Tip

For an even spicier marinade, increase the amount of peppers. You can prepare the marinade the night before for better flavor penetration. Choose a free-range chicken for more flavor.
