- 2 beaten eggs
- 3.5 oz Panko breadcrumbs

- 2 tbsp Worcestershire sauce
- 1 tbsp oyster sauce
- 2 tbsp sugar
- Salt and pepper

Remove excess fat from each cutlet. Flatten between two sheets of parchment paper to 0.4 in thickness with a meat tenderizer or rolling pin. Return to original shape.

Place flour, eggs, and breadcrumbs in three separate bowls. Season the pork, then coat in flour, egg, and finally breadcrumbs.

Heat oil in a large frying pan to 2 in deep. Fry at 356°F for 1 min 30 sec per side. Let rest on a wire rack for 5 min. Repeat.

Prepare the sauce by whisking all ingredients together. Add water if thickened. Slice the tonkatsu and serve with sauce.

Don't exceed 356°F for a crispy breading. Resting after cooking is essential to keep the meat juicy.
