- 2 whole Lemons
- 4 cloves Garlic
- 1/2 cup Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 bunch Fresh Herbs (thyme, rosemary, parsley)
- 2 whole Zucchini
- 3 whole Carrots
- 2 whole Bell Peppers
- 2 whole Onions
- 7 oz Cherry Tomatoes

Prepare the marinade by mixing the olive oil, lemon juice, minced garlic, salt, pepper, and fresh herbs.

Place the salmon in a dish and pour the marinade over it. Let rest for 10 minutes.

Meanwhile, cut all the vegetables into regular pieces.

Arrange the vegetables on a baking sheet, drizzle with olive oil, salt, and pepper.

Roast the vegetables at 392°F for 15 minutes.

Add the marinated salmon to the baking sheet with the vegetables and continue cooking for 15-20 minutes until the salmon is golden.
