Brazilian-Style Chicken Pâté

- 300 g of cooked and shredded chicken breast
- 200 g of heavy cream (or whole heavy cream)
- 4 tablespoons of mayonnaise
- 1/2 finely chopped red onion
- 3 tablespoons of drained canned sweet corn
- 3 tablespoons of freshly chopped parsley
- Fine salt, to taste
- Freshly ground black pepper, to taste
- Small breads or toasted bread, for serving

Cook the chicken breast in boiling salted water with a bay leaf for 20 minutes, then let it cool. Finely shred the meat with a fork or your hands, removing any excess fat.

In a large bowl, combine the shredded chicken with heavy cream and mayonnaise. Mix vigorously with a fork until you get a smooth and homogeneous base.

Add the finely chopped red onion, sweet corn, and freshly chopped parsley. Mix again to distribute all the ingredients evenly.

Generously season with fine salt and freshly ground black pepper. Taste and adjust the seasoning to your liking.
