  • 3 tablespoons grated Parmesan cheese
  • 4 tablespoons oat flour or cornstarch
  • 1 clove garlic, minced
  • Fresh parsley or chives, to taste
  • 2-3 tablespoons olive oil
  • Salt and black pepper, to taste

Directions

    Peel and grate the chayotes and carrot.

    In a mixing bowl, combine the grated chayote, carrot, eggs, Parmesan cheese, and minced garlic.

    Season with salt, pepper, and fresh herbs, then add the flour until a uniform consistency is achieved.

    Shape into small fritters using two spoons.
