Crispy Milanese-Style Eggplant

- 2 medium eggplants
- 1 1/4 cups all-purpose flour
- 2 eggs
- 2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste

- 1 fresh lemon

Wash the eggplant and cut into 1/2-inch thick slices.

Salt the slices and let them rest for 15 minutes to remove bitterness.

Pat the slices dry with paper towels.

Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan.

Dredge each slice in the flour, then dip in the egg, and finally coat with the breadcrumb mixture.

💡 Chef's Tip
