Directions

  1. 1

Lightly pound the chicken breasts to an even thickness of about ¾ inch. Season generously with salt, pepper, and smoked paprika on both sides.

  2. 2

Lightly dredge each breast in flour, tapping off the excess. This step ensures a beautiful golden crust and helps the sauce cling to the meat.

  3. 3

Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken 4–5 minutes per side until golden. Transfer to a plate.

  4. 4

In the same skillet (without cleaning), reduce heat to medium and sauté the minced garlic for 1 minute, stirring, until fragrant but not browned.

  5. 5

Add the sun-dried tomatoes, oregano, and red pepper flakes. Cook 2 minutes, stirring well to release the flavors.

  6. 6

Deglaze with the chicken broth, scraping up all the browned bits from the bottom of the pan — that's where all the flavor hides.

  7. 7

Stir in the heavy cream and bring to a gentle simmer. Let reduce for 3–4 minutes over medium heat until the sauce begins to thicken.

  8. 8

Add the grated Parmesan and stir until fully melted. Taste and adjust seasoning with salt and pepper.

  9. 9

Return the chicken and any resting juices to the skillet. Partially cover and simmer over low heat for 5–7 minutes, until the chicken is cooked through (internal temp 165°F).

  10. 10

Off the heat, tear the fresh basil by hand and stir into the sauce. Serve immediately from the skillet or plate over pasta, rice, or crusty bread.

💡 Chef's Tip

The secret to a perfectly silky sauce: never hard-boil the cream after adding the Parmesan — it will break and turn grainy. A gentle simmer is all you need. For even deeper flavor, use the oil from the sun-dried tomato jar instead of olive oil — it's packed with concentrated flavor.
