🛒 Ingredients

25 servings

25
  • 30 g fresh baker's yeast
  • 1 teaspoon sugar
  • 1½ cups warm milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon salt
  • 2 garlic cloves, finely minced
  • 4 cups all-purpose flour (approximately)
  • 1 egg yolk for brushing
  • 200 g salted butter, melted
  • 2 tablespoons garlic, finely minced
  • 1 cup fresh flat-leaf parsley, chopped
  • 100 g grated parmesan cheese

Directions

  1. 1

Dissolve the yeast in the sugar, then add warm milk. Let rest for 5 minutes until slightly foamy.

  2. 2

Add unsalted butter, salt, minced garlic, and flour gradually. Knead the dough for 8–10 minutes until smooth and elastic.

  3. 3

Shape into small, even balls and place on a floured baking tray. Brush immediately with egg yolk, then let rise for 30 minutes at room temperature.

  4. 4

Bake in a preheated oven at 180 °C (356 °F) for 22–25 minutes, until the rolls are golden brown.

  5. 5

While the rolls bake, melt the salted butter over low heat, remove from heat, then stir in the minced garlic and chopped parsley.

  6. 6

Remove rolls from the oven and generously drizzle the garlic herb butter over each roll.

  7. 7

Sprinkle with grated parmesan and return to the oven for 5 more minutes, until the cheese is melted and lightly golden.

  8. 8

    Serve immediately while hot.

💡 Chef's Tip

For extra fluffiness, replace half the milk with lukewarm heavy cream. A pinch of smoked paprika or chili flakes in the garlic butter adds a subtle kick.
