🛒 Ingredients

6 servings

6
  • 1 cup milk (240 ml)
  • 2 cups self-rising flour
  • 2 tablespoons neutral oil
  • 1 egg
  • 1 pinch of salt or 2 tablespoons grated Parmesan
  • 1 can sardines in oil (or tuna)
  • 1 medium onion, thinly sliced
  • 1 tomato, diced
  • Dried oregano, to taste
  • 2 tablespoons soy sauce or salt, to taste

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). In a large bowl, whisk together the milk, flour, oil, egg and salt until you get a smooth, lump-free batter.

  2. 2

Pour the batter into a lightly oiled pizza pan or baking dish and spread it out evenly.

  3. 3

Drain the sardines and carefully remove the central bones. Set aside.

  4. 4

In a small pan, sauté the sliced onion and diced tomato until softened. Season with soy sauce or salt, add the sardines and stir gently.

  5. 5

Spread the sardine topping evenly over the raw batter and sprinkle generously with dried oregano.

  6. 6

Bake for about 30 minutes until the edges are golden brown. Serve warm.

💡 Chef's Tip

Swap sardines for tuna if preferred. A drizzle of lemon juice over the topping just before baking adds a bright, fresh note.
