Directions
- 1
Cut the chicken into even pieces and season generously with salt, pepper, and crushed garlic.
- 2
Heat the oil in a large pot over medium-high heat. Brown the chicken pieces on all sides until deep golden.
- 3
Add the sliced onions and cook until translucent, then add the bouquet garni.
- 4
Splash small amounts of hot water intermittently to help the flavors penetrate the meat, allowing the liquid to reduce and caramelize between additions.
- 5
Once the chicken is well-browned, transfer it to a pressure cooker with the stock cubes and enough water to cover. Cook under pressure for 20 minutes.
- 6
In the same pot, toast the dry rice until pearlescent, then drain any excess oil.
- 7
Add the cooked chicken and all its broth to the toasted rice. Top up with hot broth if needed to fully cover the rice.
- 8
Cover and simmer on low heat until all liquid is absorbed, stirring gently occasionally. The rice should be fluffy and each grain separate.
💡 Chef's Tip
For even deeper flavor, marinate the chicken overnight with garlic, lemon juice, and fresh herbs. No pressure cooker? Simmer the chicken covered in a heavy pot for 45 minutes over low heat instead.
