Directions
- 1
The day before, marinate the chicken breasts in white wine, crushed garlic, salt, and pepper for at least 12 hours in the refrigerator.
- 2
The next day, heat olive oil in a large pot over medium heat. Remove the chicken from the marinade (keep the liquid) and sear until golden on both sides.
- 3
Pour in the reserved marinade, cover, and simmer over low heat for 30–35 minutes until the chicken is very tender. Let cool slightly.
- 4
Shred the chicken using two forks and set aside along with the cooking juices.
- 5
Cook the rice using the chicken cooking juices as part of the liquid for extra flavor. Let cool completely to room temperature.
- 6
In a skillet, sauté the onion and bell pepper in olive oil until soft. Add the shredded chicken, parsley, and chives, and stir-cook for 3–4 minutes.
- 7
In a large bowl, gently fold the cooled rice together with the seasoned chicken mixture.
- 8
Add the raisins, diced apples, sliced sausages, peas, corn, and ham if using, and mix gently.
- 9
Adjust seasoning, transfer to a serving platter, and garnish with fresh chopped parsley.
