Acadian Râpure Pie
A classic Acadian dish blending tender chicken, golden onions, and grated potatoes. This traditional Canadian comfort food is perfect for family meals and sure to please everyone.

- 2 onions, chopped
- 17 cups chicken broth
- 53 oz chicken breast
- 141 oz potatoes
- 2 tbsp salt

Preheat the oven to 392°F and grease a 10x14x2 inch baking dish.

Melt the butter in a skillet over medium heat, add the chopped onion, and cook for 5 minutes. Reduce the heat and continue cooking, stirring occasionally, until fully caramelized (about 40 minutes more).

Bring the chicken broth to a boil, add the chicken breasts, and reduce the heat. Simmer for 20 minutes until fully cooked. Remove the chicken and reserve the broth.

Grate the potatoes using an electric grater, collect the pulp, and discard the liquid.

Mix the grated potatoes with the salt and pepper. Gradually add the reserved broth until the mixture reaches a porridge-like consistency.

Spread half of the potato mixture into the prepared baking dish. Arrange the cooked chicken on top, sprinkle with the caramelized onions, then cover with the remaining potato mixture.
