🛒 Ingredients

4 servings

4
  • 4 ripe but firm bananas
  • 10 tablespoons white sugar
  • ½ cup water (125 ml)
  • Zest of 1 lemon (organic preferred)

Directions

  1. 1

Pour the sugar into a large skillet and heat over medium heat without stirring, until the edges begin to melt.

  2. 2

Let the sugar caramelize to a golden amber color — don't let it get too dark or it will taste bitter.

  3. 3

Carefully pour in the water (watch out for steam!) and stir gently to dissolve any hardened caramel pieces.

  4. 4

Peel the bananas, add them whole or halved to the pan, and scatter lemon zest over the top.

  5. 5

Cover partially and cook over low heat for 4 to 5 minutes, until the bananas are soft but still hold their shape.

  6. 6

Remove from heat and serve immediately: with a scoop of vanilla ice cream, a drizzle of cream, or just a dusting of cinnamon.

💡 Chef's Tip

Keep a close eye on your caramel — the moment it turns golden, add the water. Too dark means bitter, too pale means overly sweet. Use bananas that are ripe but still slightly firm so they don't fall apart during cooking.
