Falafel Pita Sandwich with Tahini Sauce

- 1/4 cup Tahini
- 1/4 cup Water
- 2 tbsp Fresh lemon juice
- 2 cloves Garlic
- 1/4 tsp Paprika
- 6 Pita breads
- 1 Lettuce
- 1 Tomato
- 1/2 Cucumber
- 1 Dill pickle
- 1/4 Red onion
- 3 tsp Harissa spice

Preheat the oven to 450°F.

Arrange the falafel on a baking sheet.

Bake for 8 to 10 minutes until heated through.

While baking, whisk together the tahini, water, lemon juice, garlic, and paprika in a bowl until the sauce is smooth.

Cut about 1 inch off the top of each pita bread to form a pocket.

Fill each pita with 2 falafel and equal portions of lettuce, tomato, cucumber, pickles, and red onion.

Prepare the tahini sauce in advance for convenience. You can also make your own falafel from scratch if you have the time. The pickles and harissa can be adjusted according to your spice preference.
