By Marie Lefebvre · Updated October 11, 2026

Golden egg threads are a breathtaking Portuguese confection where egg yolks are spun into shimmering, silky strands through a simmering sugar syrup. As delicate as they are beautiful, they turn any cake or dessert into a showstopper. Once you master the technique, you'll want to crown everything with gold.

🛒 Ingredients

4 servings

4
  • 12 fresh egg yolks
  • 1 kg (4½ cups) white sugar
  • 1.5 litres (6 cups) water
  • cold water for rinsing

Directions

  1. 1

Combine the sugar and water in a large heavy-bottomed saucepan. Bring to a boil over medium heat, stirring until the sugar fully dissolves. Reduce to a gentle simmer until you have a light, slightly sticky syrup.

  2. 2

Whisk the egg yolks with one tablespoon of water until completely smooth and fluid. Strain through a fine-mesh sieve to remove any fibres and ensure the threads come out perfectly even.

  3. 3

Fill a small-holed funnel or a squeeze bottle with the egg yolk mixture. Holding it over the gently simmering syrup, draw slow, steady circles around the inside of the pan to form long, fine golden threads.

  4. 4

Once the threads set (about 20–30 seconds), lift them out carefully with a slotted spoon and transfer to a fine-mesh strainer.

  5. 5

Rinse briefly under cold water to stop the cooking and keep them pliable. Gently separate with a fork and use immediately to decorate cakes, tarts, or plated desserts.

💡 Chef's Tip

Keep the syrup at a gentle simmer throughout — too much heat will break the threads before they form. A squeeze bottle with a very fine tip gives you the most control over thread thickness.
