🛒 Ingredients

12 servings

12
  • 2 cups oat flour (about 200g)
  • 4 eggs
  • 4 ripe bananas
  • 1 cup raisins (about 150g)
  • 1/3 cup vegetable oil (sunflower or coconut)
  • 1½ tablespoons baking powder

Directions

  1. 1

Preheat your oven to 350°F (180°C) and grease a cake pan, dusting it lightly with oat flour.

  2. 2

In a blender, combine the peeled bananas, eggs, and oil. Process until completely smooth.

  3. 3

Pour the oat flour into a large mixing bowl and gradually stir in the banana mixture.

  4. 4

Mix with a spatula until the batter is smooth and lump-free.

  5. 5

Fold in the raisins, distributing them evenly throughout the batter.

  6. 6

Add the baking powder last and stir briefly to combine.

  7. 7

Pour the batter into the prepared pan and bake for 25 to 30 minutes.

  8. 8

Test doneness by inserting a toothpick in the center — it should come out clean. Let cool completely before unmolding.

💡 Chef's Tip

Very ripe bananas with dark-spotted skins are ideal — they're naturally sweeter and keep the cake extra moist. Feel free to add chopped walnuts, dark chocolate chips, or dried cranberries and apricots for extra flavor and texture.
