🛒 Ingredients

1 servings

1
  • 8 tablespoons sweetened cocoa powder
  • 2 tablespoons unsalted butter
  • 6 tablespoons whole milk
  • 1¾ cups granulated sugar (about 400 ml)

Directions

  1. 1

Combine the cocoa powder, butter, milk, and sugar in a small saucepan. Stir with a wooden spoon until the mixture is smooth and evenly blended before applying heat.

  2. 2

Place the saucepan over medium heat, stirring constantly. As soon as the glaze comes to a full rolling boil, remove it from the heat immediately.

  3. 3

Pour the hot glaze straight away over a still-warm cake, spreading it evenly with a spatula. Allow to cool at room temperature until the surface sets into a glossy, crispy crust.

💡 Chef's Tip

The secret to a perfect crispy crust is pouring the glaze while both the glaze and the cake are still warm. If either cools down too much beforehand, the glaze won't set with that signature crunch. Works beautifully over a carrot or vanilla sponge.
