🛒 Ingredients

1 servings

1
  • 1 can sweetened condensed milk (14 oz / 395 g), chilled
  • 1 tablespoon pastry emulsifier
  • 1 teaspoon pure vanilla extract
  • 1 pinch of fine salt

Directions

  1. 1

Refrigerate the condensed milk for at least 1 hour before starting — cold milk is essential for achieving a fluffy, stable frosting. Pour it into the bowl of a stand mixer or use a hand mixer with a whisk attachment.

  2. 2

Add the pastry emulsifier, vanilla extract, and salt to the bowl. Beat on medium speed for 2 minutes until all the ingredients are evenly combined and the mixture begins to lighten.

  3. 3

Increase to high speed and beat for 6 to 8 minutes until the frosting turns bright white, fluffy, and holds stiff peaks. It is ready when it stays put on the beaters without drooping or falling.

💡 Chef's Tip

Use immediately for the best consistency and finish. Refrigerate any decorated cakes or pastries. For flavored or colorful variations, fold in a few drops of gel food coloring or 1 tablespoon of cocoa powder at the very end of mixing.
