🛒 Ingredients

4 servings

4
  • 1 tablespoon cake emulsifier (or meringue powder)
  • 250 g (2 cups) powdered sugar, sifted
  • 200 ml (¾ cup) very cold sparkling lemonade or clear soda
  • Gel food coloring, added to reach desired shade
  • 5 drops of your preferred extract (vanilla, strawberry, lemon, or almond)

Directions

  1. 1

Combine all ingredients — emulsifier, powdered sugar, chilled sparkling soda, food coloring, and extract — directly in the bowl of a stand mixer or a deep mixing bowl.

  2. 2

Beat on high speed for 8 to 10 minutes until the frosting is thick, glossy, and holds stiff peaks when you lift the beaters.

  3. 3

Cover the bowl and refrigerate for at least 1 hour to firm up the texture and improve piping consistency.

  4. 4

Transfer to a piping bag fitted with your desired tip and decorate your cakes, cupcakes, or tarts as desired.

💡 Chef's Tip

Make sure the soda is ice-cold straight from the fridge — this is key for achieving the right volume. Divide the frosting into separate bowls before adding colors to create a multi-toned palette. Leftover frosting keeps well in an airtight container in the refrigerator for up to 3 days.
