🛒 Ingredients

4 servings

4
  • 2 cups (about 240 g) powdered sugar, lightly packed
  • 3 to 4 tablespoons fresh lemon juice, orange juice, or coconut milk
  • 1 teaspoon margarine or unsalted butter
  • 2 teaspoons warm water

Directions

  1. 1

In a small bowl, combine the margarine and warm water, stirring until the margarine is completely melted and the mixture is smooth.

  2. 2

Gradually stir in the powdered sugar, alternating with the lemon juice, orange juice, or coconut milk, mixing continuously until the glaze is silky and pourable.

  3. 3

Check the consistency by lifting the spoon — the glaze should drip slowly. Add a little more sugar to thicken, or a few extra drops of juice or coconut milk to thin it out.

  4. 4

Pour the glaze immediately over the warm cake so it soaks in slightly and sets into a glossy, beautiful coating as it cools.

💡 Chef's Tip

Stir in fresh lemon or orange zest for a more vibrant flavour. If using coconut milk, finish with toasted coconut flakes for a gorgeous look and extra texture. This glaze works wonderfully on pound cakes, loaf cakes, and shortbread cookies.
