This silky Italian meringue frosting is the secret weapon of professional bakers, delivering a glossy, cloud-like finish that holds its shape beautifully even at room temperature. Made by streaming hot sugar syrup over whipped egg whites, it creates a stable, luscious topping that elevates any cake or cupcake. Once you master this technique, store-bought frosting will never compare.

🛒 Ingredients

4 servings

4
  • 1½ cups (300 g) granulated sugar
  • ½ cup (100 ml) water
  • 4 large egg whites, room temperature
  • Pinch of cream of tartar (optional, for stability)

Directions

  1. 1

Combine sugar and water in a small heavy-bottomed saucepan over medium heat. Cook without stirring until the syrup reaches the soft-thread stage (110–115 °C / 230–240 °F on a candy thermometer).

  2. 2

To test without a thermometer, dip two fingers into slightly cooled syrup — slowly pulling them apart should form a thin, flexible thread that does not break easily.

  3. 3

While the syrup heats, beat egg whites with cream of tartar (if using) in a stand mixer on high speed until stiff, glossy peaks form.

  4. 4

With the mixer running on high, pour the hot syrup in a slow, steady, thin stream down the side of the bowl directly onto the egg whites — never stop beating.

  5. 5

Continue beating until the meringue is completely cool, thick, and glossy with firm peaks, about 8–10 minutes. Use immediately to frost your cake.

💡 Chef's Tip

Your bowl and beaters must be completely grease-free — even a trace of fat will prevent the egg whites from whipping. Room-temperature whites whip to a greater volume than cold ones. This frosting is best applied the same day it is made.
