🛒 Ingredients

4 servings

4
  • 1 cup (250 ml) whole milk, very cold (almost frozen)
  • 1 cup (200 g) granulated sugar
  • 1 tablespoon pastry emulsifier
  • 1 teaspoon pure vanilla extract
  • Food coloring or flavored gelatin powder (optional)

Directions

  1. 1

Place your mixing bowl and whisk attachment in the freezer for 15 minutes before starting. Cold equipment is the key to achieving a firm, voluminous frosting.

  2. 2

Pour the ice-cold milk into the chilled bowl, then add the sugar, emulsifier, and vanilla extract. Beat on high speed for 20 to 25 minutes until the mixture triples in volume and forms a light, firm cream that holds its shape.

  3. 3

To add color or flavor, gently fold in a few drops of food coloring or a teaspoon of flavored gelatin powder using a spatula with slow, sweeping motions to preserve the airiness.

  4. 4

Use immediately to frost cakes, fill cupcakes, or decorate your desserts. Keep decorated items refrigerated until ready to serve.

💡 Chef's Tip

The colder the milk, the better the result — pop it in the freezer for 10 minutes before whipping. Try different flavors like orange blossom, lemon zest, or strawberry for endless variations.
