🛒 Ingredients

4 servings

4
  • 2 egg whites, at room temperature
  • 3½ cups (420 g) sifted powdered sugar
  • 1 pinch of baking powder
  • 1 tablespoon fresh lemon juice
  • A few drops of food coloring (colors of your choice)

Directions

  1. 1

In a large, clean bowl, combine the egg whites, sifted powdered sugar, baking powder, and lemon juice. Stir with a spatula until a smooth, uniform paste forms.

  2. 2

Beat vigorously by hand or with an electric mixer for 3–5 minutes until the icing is thick, glossy, and holds stiff peaks.

  3. 3

Divide the icing into small bowls — one for each color you plan to use.

  4. 4

Add a few drops of food coloring to each bowl and mix well until the color is fully and evenly blended.

  5. 5

Using a thin toothpick, piping bag, or icing pen, decorate your cookies with outlines, patterns, and freehand designs. Allow to dry at room temperature for at least 1 hour before handling.

💡 Chef's Tip

For outline icing (thicker, holds its shape), use the recipe as is. For flood icing (thinner, fills surfaces smoothly), stir in a few drops of water until it reaches the consistency of light syrup. Always keep unused icing covered with a damp cloth to prevent it from drying out.
