🛒 Ingredients

4 servings

4
  • 700 g very lean ground beef (trimmed of all fat)
  • 250 g fine bulgur wheat
  • 1 large onion
  • 1 bunch of fresh mint
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Lebanese seven-spice (kibbeh spice blend)
  • 3/4 cup ice-cold water
  • Fine salt, to taste

Directions

  1. 1

Rinse the bulgur wheat under cold running water until it runs completely clear. Cover with cold water by at least 2 inches and let soak for 20 minutes — it will nearly double in size.

  2. 2

Finely dice the onion and chop the fresh mint leaves.

  3. 3

Drain the soaked bulgur through a clean kitchen cloth, squeezing firmly to remove all moisture — it must be completely dry.

  4. 4

In a large bowl, combine the ground beef, dried bulgur, onion, mint, salt, seven-spice, and olive oil. Add the ice-cold water gradually while kneading vigorously until the mixture is smooth, uniform, and slightly tacky.

  5. 5

Transfer to a serving platter. Flatten and shape with your palm, pressing shallow decorative grooves into the surface. Drizzle generously with olive oil.

  6. 6

Refrigerate for at least 1 hour. Serve cold alongside pita bread, spring onions, and olives.

💡 Chef's Tip

Freshness is everything — buy your beef from the butcher the same morning and keep it cold until you're ready to mix. The longer you knead, the silkier the texture becomes. Ice-cold water is non-negotiable: it binds the mixture and keeps the meat at a safe temperature throughout.
