🛒 Ingredients

15 servings

15
  • 2 cans (approx. 800 g) sweetened condensed milk
  • 250 g margarine or unsalted butter, softened
  • 500 g unsweetened cocoa powder
  • 6 eggs, yolks and whites separated
  • 6 tablespoons sugar
  • 1½ tablespoons unflavored powdered gelatin
  • 300 g white or dark chocolate chips

Directions

  1. 1

Submerge the sealed condensed milk cans in a large pot of boiling water and cook for about 40 minutes to caramelize the contents. Remove carefully and let cool completely before opening.

  2. 2

Using a stand or hand mixer, beat the egg yolks with sugar and softened margarine until pale and fluffy. Add the cooled caramelized condensed milk and cocoa powder, beating until fully combined.

  3. 3

Sprinkle the gelatin over 3 tablespoons of cold water and let it bloom for 5 minutes, then gently heat until dissolved. Stir immediately into the chocolate mixture.

  4. 4

In a clean, dry bowl, beat the egg whites to stiff peaks. Gently fold them into the chocolate cream using a spatula, working in slow circular motions from the bottom up to keep the mousse light and airy.

  5. 5

Cover and refrigerate the mousse for 15 minutes to begin setting.

  6. 6

Fold in the chocolate chips and return to the refrigerator for another 10 minutes.

  7. 7

The mousse is ready to spread generously between your cake layers. Assemble the cake right after filling.

💡 Chef's Tip

For a more intense flavor, use 70% dark chocolate chips. Make sure the condensed milk has cooled completely before mixing, as warmth can deflate the beaten egg whites. This mousse can be made the night before and kept refrigerated until assembly.
