  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 1 can light cream or table cream (7 oz / 200 ml)
  • ¾ cup fresh or frozen passion fruit juice
  • 7 oz (200 g) shortbread or butter cookies
  • 1 fresh passion fruit for topping

Directions

    Combine the condensed milk, cream, and passion fruit juice in a blender. Blend for 1–2 minutes until the mixture is smooth, airy, and well combined. Refrigerate while you prepare the dish.

    Spread a generous layer of the passion fruit cream on the bottom of a rectangular dish (approx. 8 × 12 in). Arrange a single layer of cookies on top, fitting them snugly side by side.

    Continue alternating layers of cream and cookies until all ingredients are used, always finishing with a final smooth layer of cream on top.

    Halve the fresh passion fruit and spoon the seeds and pulp over the top as decoration. Place a few whole cookies around the edges for presentation.

    Cover with plastic wrap and refrigerate for at least 3 hours, or overnight for best results, before serving cold.

For extra depth of flavor, stir a tablespoon of passion fruit concentrate into the cream before blending. Shortbread cookies provide a richer taste than plain crackers. Keeps well in the fridge for up to 3 days.
