🛒 Ingredients

5 servings

5
  • 50 g shredded mozzarella cheese
  • 50 g tapioca starch
  • salt to taste (optional)
  • cooking spray (for the basket)

Directions

  1. 1

Take the mozzarella out of the fridge a few minutes ahead, or microwave it for 20 seconds to soften — you're not melting it, just making it pliable.

  2. 2

Place the shredded mozzarella and tapioca starch in a mixing bowl.

  3. 3

Knead with your hands for 2–3 minutes until you have a smooth, uniform dough that holds its shape.

  4. 4

Taste before adding salt, as mozzarella can already be quite salty.

  5. 5

Pinch off small portions and roll them between your palms into walnut-sized balls.

  6. 6

Lightly spray the air fryer basket and place the balls inside, leaving space between each.

  7. 7

Air fry at 180 °C (356 °F) for 8–10 minutes until puffed and golden. Serve right away!

💡 Chef's Tip

If the dough sticks to your hands, lightly dampen your palms with cold water. For extra flavour, fold in a pinch of garlic powder or dried oregano before shaping.
