🛒 Ingredients

8 servings

8
  • 8 thin beef slices (sirloin or rump), tenderized with a mallet
  • 8 thin slices of smoked bacon
  • 1 green bell pepper, cut into thin strips
  • 1 medium onion, sliced into thin rings
  • 2 medium carrots, cut into thin sticks
  • 500 ml beef broth
  • 300 ml tomato sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Directions

  1. 1

Tenderize the beef slices with a meat mallet until thin and even. Season both sides with salt, garlic powder, and onion powder. Let rest for 30 minutes so the flavours fully absorb.

  2. 2

Lay each slice flat and place one strip of bacon, one strip of bell pepper, a ring of onion, and a stick of carrot across the centre, keeping 1 cm clear at the edges.

  3. 3

Roll each slice tightly and secure with one or two toothpicks to hold the filling in place during cooking.

  4. 4

Heat a drizzle of oil in a pressure cooker over high heat and sear the rolls on all sides until golden brown.

  5. 5

Pour in the beef broth and tomato sauce, stir gently, and adjust seasoning. Bring to a boil.

  6. 6

Lock the pressure cooker lid, bring up to full pressure, then cook for 10 minutes over medium heat. Allow the pressure to release naturally before opening.

  7. 7

Carefully remove the toothpicks, arrange the rolls on a serving plate, and spoon plenty of sauce over the top. Serve with white rice or roasted potatoes.

💡 Chef's Tip

Add a tablespoon of tomato paste and a bay leaf to the sauce for extra depth of flavour. The rolls can be assembled the night before and refrigerated — cook them fresh the next day for the best texture and taste.
