🛒 Ingredients

5 servings

5
  • 2 tablespoons unsalted butter
  • 3 tablespoons sweetened cocoa powder
  • 1 cup (200 ml) heavy cream
  • 1 pinch of fine salt

Directions

  1. 1

Melt the butter in a small saucepan over very low heat, stirring gently until fully liquid and slightly foamy.

  2. 2

Remove from heat and add the cocoa powder and salt. Whisk vigorously until you get a smooth, glossy paste with no lumps.

  3. 3

Return to low heat and pour in the heavy cream in a steady stream, whisking continuously. Cook for about 5 minutes, stirring constantly, until the sauce is smooth and coats the back of a spoon.

  4. 4

Remove from heat and rest for 2 minutes before serving — the sauce will thicken slightly as it cools.

💡 Chef's Tip

For a more intense flavour, swap sweetened cocoa for pure unsweetened cocoa powder and add 1 tablespoon of sugar. Store in an airtight jar in the fridge for up to 5 days and gently reheat in a bain-marie before use.
