🛒 Ingredients

1 servings

1
  • 200 ml fresh orange juice (about 2 oranges)
  • 3 heaped tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon finely grated orange zest

Directions

  1. 1

Juice the oranges and strain to get 200 ml. Set aside 2 tablespoons of juice in a small bowl to dissolve the cornstarch.

  2. 2

Pour the remaining juice into a small saucepan with the sugar and orange zest. Bring to a boil over medium heat, stirring often.

  3. 3

Dissolve the cornstarch in the reserved cold juice, mixing until completely smooth with no lumps.

  4. 4

Pour the cornstarch mixture into the boiling syrup while stirring constantly without stopping. Cook for 1–2 minutes until the syrup turns translucent and velvety.

  5. 5

Remove from heat and use immediately to glaze a cake, soak a sponge, or coat a fruit tart.

💡 Chef's Tip

For an extra-glossy finish, stir in a small pat of butter off the heat. The syrup thickens as it cools — gently rewarm it over very low heat if you need to use it later.
