  • 500 ml water
  • 1 tablespoon dashi powder (hondashi)
  • 2 tablespoons miso paste
  • Soft tofu, cut into small cubes, to taste
  • Dried wakame seaweed (rehydrated), to taste
  • Fresh green onion, finely chopped, to taste

Directions

    Pour the water and dashi powder into a saucepan. Warm over medium heat — do not let it boil. Gentle heat keeps the broth clear and full of flavour.

    While the broth warms, rehydrate the wakame by soaking it in cold water for 5–8 minutes (or 2 minutes in warm water). Drain thoroughly before adding to the soup.

    Once the broth is hot, add the tofu cubes and drained wakame. Let them warm through over low heat for about 2 minutes.

    Ladle a small amount of hot broth into a separate bowl. Add the miso paste and whisk until completely dissolved — this prevents any lumps in the soup.

    Pour the dissolved miso back into the saucepan and stir gently. Heat for a moment longer, then turn off the heat before any bubbling begins.

    Ladle into bowls, top with chopped green onion and serve immediately while piping hot.

💡 Chef's Tip

Never boil the soup after adding miso — high heat destroys its delicate flavour and natural probiotics. For a fully vegan version, swap bonito-based dashi for kombu dashi.
