- 32 oz beef chuck roast
- 2 red onions
- 4 cloves garlic
- 3 dried chiles (chipotle or ancho)
- 2 fresh jalapeños
- 16 oz tomatoes
- 6.3 cups beef broth
- 2 tbsp white vinegar
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp soy sauce
- 1 bunch fresh cilantro
- 2 green onions
- 4 eggs
- 2 tbsp olive oil
- Salt and pepper to taste

Prepare the birria sauce: sauté the dried chiles and garlic, then blend them with the tomatoes, vinegar, cumin, and paprika.

Sear the beef, cut into large chunks, in hot oil until browned.

Add the chile paste to the beef, pour in the broth, and simmer for 2-3 hours over low heat.

Remove the beef and shred it into small pieces, reserve the broth.

Cook the eggs for 6-7 minutes for a runny yolk, peel and halve them.

Cook the ramen noodles according to package directions.

Reheat the birria broth with the soy sauce, add the cooked noodles.

Divide into bowls, garnish with the shredded beef, egg, jalapeños, cilantro, and green onions.
