- 14 oz button mushrooms
- 4 slices prosciutto or dry-cured ham
- 1 sheet puff pastry
- 2 tbsp mustard
- 1 egg yolk
- 2 tbsp butter
- Salt and pepper to taste

Quickly sear the beef tenderloin in butter, then season with salt and pepper. Let it cool.

Finely chop the mushrooms and sauté them until all the water has evaporated.

Lay out the prosciutto, cover with the mushrooms, place the beef on top, and brush with mustard.
