Feijoada
Feijoada is a rich and authentic Brazilian dish made with black beans slow-cooked with various cuts of pork and beef. Everything is simmered until the sauce is creamy and the meat is tender. It is served with traditional sides: white rice, farofa, fresh orange slices, sautéed collard greens, and fried bananas.

- 1.1 lbs black beans
- 10.5 oz pork sausages
- 10.5 oz pork ribs
- 10.5 oz pork shank
- 9 oz pork shoulder
- 7 oz pork tail
- 1.5 cups white rice
- 7 oz farofa
- 3.5 tbsp butter
- 2 oranges
- 1 small head collard greens
- 4 cloves garlic
- 4 bananas
- 2 cups vegetable oil
- Salt and pepper to taste

Soak the black beans for 12 hours.

In a large Dutch oven, brown the pork meats.

Add the drained beans and cold water, then let simmer for 3-4 hours over low heat.

Cook the white rice according to package instructions.

Toast the farofa with butter in a skillet until golden brown.

Cut the oranges into thin slices.

Thinly slice the collard greens and sauté them with garlic in oil.

Slice the bananas into rounds and fry until golden.

💡 Chef's Tip
Prepare the feijoada the day before so the flavors can develop. Do not add salt at the beginning of cooking so the beans remain whole. Feijoada reheats very well and gains flavor over time.
