  • 2 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 1 pinch salt
  • 1 pinch pepper
  • 1 sprig rosemary
  • 2 cups dry red wine
  • 4 potatoes, skin-on
  • 1 tbsp butter
  • 1 tbsp whole grain mustard
  • 1/4 cup sour cream or crème fraîche
  • 1 pinch nutmeg
  • 1 head of garlic (cloves peeled)
  • 3 tbsp olive oil
  • 1 sprig thyme

Directions

    Marinate the beef ribs with the crushed garlic, paprika, Worcestershire sauce, mustard, salt, pepper, rosemary, and red wine. Let rest for 2 hours.

    Preheat the oven to 320°F. Bake the ribs covered for 3 hours and 30 minutes, then uncovered for 30 minutes to brown.

    Meanwhile, confit the garlic in olive oil over low heat with thyme for 45 minutes.

    Prepare the rustic mash: cook the potatoes with the skin on, then mash them with butter, mustard, sour cream or crème fraîche, salt, and nutmeg.
