Accordion-Shaped Potato Skewers

- 4 medium-sized firm potatoes (type Charlotte or Monalisa)
- 60g of melted butter
- 3 finely chopped garlic cloves
- 1 teaspoon of smoked paprika
- 2 tablespoons of fresh parsley, chopped
- 1/2 teaspoon of fine salt
- 1/2 teaspoon of ground black pepper
- 4 wooden skewers or metal brochettes
- 2 wooden dowels (for guiding the cuts)

Preheat your oven to 200°C (convection) or prepare your air fryer at the same temperature. Wash and peel the potatoes, then dry them thoroughly with paper towels.

Place a potato horizontally between two wooden dowels placed on either side – they will serve as guides to prevent cutting all the way through. Using a sharp knife, make fine vertical incisions (every 3-4mm) along one face.

Gently turn the potato over and make diagonal incisions (at 45°) with the same spacing. This double-cutting creates the characteristic accordion pattern that allows the coating to penetrate evenly.

Thread each potato onto a pre-soaked wooden skewer (or metal brochette) to maintain its shape during cooking.

In a small bowl, mix together the melted butter, garlic, smoked paprika, parsley, salt, and black pepper. Generously brush each skewer with this mixture, making sure to penetrate the coating into all the crevices.

Place the skewers on a grill or in the air fryer basket. Cook for 20-25 minutes at 200°C, flipping them halfway through and brushing them again with the remaining coating for maximum crunchiness.

The skewers are ready when the edges are golden brown and crispy. Serve immediately, garnished with some fresh parsley and accompanied by a yogurt-garlic sauce or lemon-infused sour cream.

For a perfectly regular accordion pattern, use a serrated bread knife: the teeth naturally guide the blade to produce cleaner incisions.
