Directions
- 1
Blend the eggs in a blender for 2 minutes until smooth and slightly frothy.
- 2
Add the milk to the blender and pulse briefly. Pour the mixture into a heavy-bottomed saucepan, stir in the sugar, and cook over low heat, stirring constantly until the sugar fully dissolves.
- 3
Drop in the cloves and cinnamon stick. Do not stir from this point on.
- 4
Gently pour in the lemon juice without stirring. Keep the heat as low as possible and allow the mixture to cook undisturbed until soft golden curds begin to form.
- 5
Continue cooking on the lowest heat setting for about 2 hours until the dessert turns a warm amber-gold colour. Remove the whole spices before serving warm or chilled.
💡 Chef's Tip
Never rush this dessert — high heat will cause it to burn rather than caramelize. Once you add the lemon juice, keep your hands off the spoon. The golden colour is your cue that it's ready.
