Authentic Pork Cassoulet

- 4 tablespoons goose fat
- 12.3 oz braising pork
- 1 large onion
- 10 cloves garlic
- 1 carrot, thinly sliced
- 1 teaspoon fennel seeds
- 2 tablespoons red wine vinegar
- 2.5 cups vegetable broth
- 1 tablespoon tomato paste
- 2 sprigs rosemary
- A handful of fresh parsley
- 15 oz white beans (cooked or canned)
- 2 tablespoons breadcrumbs
- A drizzle of olive oil
- Crusty bread for serving
- Broccoli for serving
- Salt and pepper to taste

Preheat oven to 284°F (140°C). In a large Dutch oven with a lid, heat the goose fat over high heat. Sear the pork, cut into pieces, for a few minutes, stirring regularly.

Reduce heat, add the onion, whole garlic cloves, carrot, and fennel seeds. Cook gently for a few minutes to soften the vegetables.

Pour in the red wine vinegar, scraping up any browned bits from the bottom of the pot. Add the broth, tomato paste, rosemary, and half of the parsley. Bring to a boil and simmer for 10 minutes. Season and cover.

Bake for 2 hours, removing the lid for the last hour. Stir occasionally and add the beans 30 minutes before the end.

Remove from oven and turn on the broiler. Sprinkle with remaining parsley and breadcrumbs, drizzle with oil. Return to oven for 5-10 minutes until golden.
💡 Chef's Tip
For an even richer cassoulet, add confit duck or smoked duck breast. Prepare this dish the day before to allow the flavors to fully develop. Serve hot with crusty bread and green vegetables.
