Avocado and Poached Egg Toast with Feta

  • 4 slices of whole grain or country bread (approximately 80g each)
  • 2 ripe avocados
  • 4 extra-fresh eggs
  • 2 medium tomatoes (or 200g cherry tomatoes)
  • 60g crumbled feta cheese
  • 60g green shoots (microgreens, arugula or young spinach shoots)
  • 1 tsp of flaked pepper (optional, e.g. Espelette or Korean type)
  • 1 tbsp white vinegar (for poaching)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Fleur de sel and freshly ground black pepper
  • A few fresh basil leaves (optional)

Directions

    Take the eggs out of the refrigerator 10 minutes before starting - a room-temperature egg poaches better than a cold one.

    Toast the bread slices in a toaster or under the grill until golden brown and crispy. Set aside.

    Cut the avocados in half, remove the pits. Scoop the flesh into a bowl with a spoon. Add lemon juice, a pinch of salt and pepper, then roughly mash with a fork leaving some chunks for texture.

    Fill a saucepan with water to about 8 cm high. Bring to a gentle simmer (around 90°C - small bubbles rise without frank boiling). Add white vinegar.

    Crack each egg individually into a ramekin or cup. Create a gentle whirlpool in the water with a spoon. Gently slide the first egg into the center of the whirlpool. Cook for 3-4 minutes depending on egg size, until the whites are set but the yolks still runny. Remove with an egg skimmer and drain on paper towels. Repeat for each egg.

    Cut the tomatoes into thin slices or halve cherry tomatoes.

    Spread a generous amount of avocado mash on each toasted bread slice. Arrange tomato slices on top. Add green shoots, distributing them evenly.

    Gently place a poached egg on each toast. Crumble feta cheese around and over the egg.

    Season with fleur de sel, freshly ground black pepper, and flaked pepper if you like it spicy. Finish with a drizzle of extra virgin olive oil and a few fresh basil leaves.

The secret to perfect poached eggs lies in their freshness - the fresher the egg, the more the whites will set around the yolks without dispersing. If you're cooking multiple eggs at once, place them in a bowl of warm water to keep them warm while assembling the toast. For avocado, always squeeze a lemon slice immediately after cutting to prevent browning.
