  • 80g of oat flakes (small flakes)
  • 1 ripe banana (approximately 120g)
  • 120ml of plant-based or whole milk
  • 1 egg
  • 1 teaspoon of baking powder
  • 1 tablespoon of unsweetened cocoa powder
  • 1 tablespoon of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 30g of dark chocolate chips
  • Butter or coconut oil for the mold

    Preheat the oven to 180°C (convection heat). Lightly butter a small ramekin or a 12cm diameter mini mold.

    In a blender or with an immersion blender, combine the oat flakes, peeled and chopped banana, milk, egg, baking powder, cocoa powder, honey, vanilla extract, and salt.

    Mix for 30 to 45 seconds until a smooth and creamy paste is obtained, similar to a brownie batter. The texture should be slightly thick but pourable.

    Pour the paste into the prepared mold, scraping the blender walls well.

    Generously sprinkle the surface with dark chocolate chips. Press a few into the paste so they melt in the center.

    Bake for 20 to 25 minutes, until the top is lightly golden and firm to the touch. The center may still be slightly soft — it's normal and delicious.

    Let cool for 2 minutes before serving directly in the ramekin. Add a drizzle of peanut butter or fresh fruit for serving, if desired.

💡 Chef's Tip

The secret to a truly fudgy baked oats: use a banana with brown spots — the riper it is, the more natural sweetness it will add to the mixture and give it that signature soft texture. For an even more brownie-like result, replace the whole egg with two egg yolks only.
