  • 2 slices of rustic country bread or whole wheat bread
  • 2 slices of sandwich bread
  • 2 fresh eggs
  • 1 ripe avocado
  • 1/2 lemon (juiced)
  • 1 pinch of fleur de sel
  • 1 pinch of Espelette pepper or smoked paprika
  • 2 whole milk or Greek yogurts
  • 2 oz granola or crunchy cereal
  • 3.5 oz mixed red berries (strawberries, blueberries, raspberries)
  • 1 tbsp honey or maple syrup
  • 2 juicing oranges
  • 16 fl oz filtered water for coffee
  • 2 scoops of quality ground coffee
  • A few fresh mint leaves (optional)
  • 1 drizzle of extra virgin olive oil

    Prepare the hard-boiled eggs: place the eggs in a pot of cold water, bring to a boil, then cook for exactly 9 minutes. Cool immediately under cold water to stop the cooking process and make peeling easier. Set aside.

    Prepare the orange juice: cut the oranges in half and squeeze them by hand or with a citrus juicer. Strain if necessary to remove seeds. Serve immediately in a large glass to preserve all the vitamins.

    Prepare the avocado cream: cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Mash with a fork to obtain a creamy but slightly textured consistency. Season with lemon juice, fleur de sel, and Espelette pepper. Mix and set aside.

    Toast the bread: place the slices of country bread in the toaster until golden brown and crispy. Do the same with the slices of sandwich bread.
