Directions
- 1
Dissolve yeast in warm water and let rest for 15 minutes until foamy.
- 2
In a large bowl, combine flour, egg yolks, sugar, oil, salt, and the activated yeast. Knead for about 10 minutes until the dough is smooth and elastic.
- 3
Cover with a clean towel and let rise in a warm spot for 2 hours, until doubled in size.
- 4
Punch down the dough, then roll it out on a floured surface to about 2 cm thickness.
- 5
Cut into rounds using a glass or cookie cutter. Place on a floured tray, cover with a cloth, and let rise for another 30 minutes.
- 6
Heat plenty of oil in a deep pan and fry the donuts until golden brown on both sides. Drain on paper towels.
- 7
For the filling: mix sugar, cornstarch, and salt in a saucepan. Whisk egg yolks with cold water and combine with the dry mixture.
- 8
Cook over medium heat, stirring constantly until thickened. Remove from heat, stir in lemon juice and butter until smooth. Let cool completely.
- 9
Fill each donut with lemon cream using a piping bag. Dust with powdered sugar and serve.
💡 Chef's Tip
Fry in small batches to keep the oil temperature consistent and get perfectly light donuts. The lemon cream can be made the night before and stored in the fridge.
