Directions
- 1
Preheat your oven to 400°F (200°C). Write your fortune messages on small strips of paper and set them aside within easy reach.
- 2
In a bowl, whisk the egg whites with the sugar until the mixture is smooth and slightly foamy — do not beat to stiff peaks.
- 3
Add the cooled melted butter and vanilla extract, and stir until fully combined.
- 4
Fold in the sifted flour and mix until you obtain a smooth batter. Add water gradually to reach a slightly liquid, thick crepe-batter consistency.
- 5
Line a baking sheet with a silicone mat or parchment paper. Drop a teaspoonful of batter and spread into a thin circle about 3 inches (8 cm) in diameter using the back of the spoon. Bake no more than 4–5 at a time.
- 6
Bake for 5–8 minutes until the edges are golden brown and the center is just lightly colored. Keep a close eye — they brown quickly!
- 7
Working immediately after removing from the oven, place a fortune strip in the center of each warm cookie, fold it in half into a half-moon, then gently press both ends downward over the rim of a glass to form the classic fortune cookie shape. Use silicone gloves to protect your hands.
- 8
Allow to cool completely on a wire rack. The cookies will harden and become crispy as they cool. Store in an airtight container away from humidity.
💡 Chef's Tip
Speed is everything — you have about 30 seconds to shape each cookie before it hardens. If working alone, fold one cookie at a time. For extra crispiness, leave the cookies in the turned-off oven for an additional 10 minutes after baking.
